Le Restaurant des Rois will close on the evening of Saturday October, 26th 2024 and reopen on Friday 11 April 2025 for dinner.
After having spent more than 20 years working in Paris with top chefs (from George V with Philippe Legendre to the Lancaster with Michel Troisgros) and having been awarded two stars at the Lancaster in 2015 and the Meilleur Ouvrier de France in 2019.
I wanted to join a large, top-notch French company in order to share my expertise, experience and simplicity. La Réserve de Beaulieu was an obvious choice: the setting, the history, the architecture, the design, the notoriety and the Delions.
My goal is to bring out emotions through my cooking. To do this, I use various seasonings along with homemade vinegars, citrus fruits and grilling as well as the influence of our suppliers from the region.
I place great importance upon nature and I like supporting the work of the fishermen, breeders and farmers who offer us exceptional products. We use their products with the highest regard for pleasing our guests.
Each day, we strive to provide all of our guests with a unique experience, and Guillaume, the restaurant’s Director, and team are charged with this.

Guillaume Anglade already has an outstanding international career behind him. After graduating from hospitality school, he went to Scotland for four years (Gleneagles Hotel) and then to the United States for two years (Wheatleigh Hotel).
In 2005, he returned to France after a meeting with chef Joël Robuchon, who recruited him as Maitre D’ of the Hotel Métropole in Monte-Carlo. It’s by Joël’s side that Guillaume diversified his professional experiences and regained a taste for travel, going as far as Shanghai and Singapore with him.
In 2012, he decided to come to La Réserve de Beaulieu to join one of the most prestigious establishments on the French Riviera. And it’s here that the hotel’s Maitre D’ found his home: a team made up of talented starred chef Julien Roucheteau and head sommelier, Wilfried, not to mention the Delions, owners of the establishment.
A perfectionist at heart, Guillaume’s goal is to lead La Réserve de Beaulieu to the height of excellence; he dreams of earning a second star for La Réserve de Beaulieu.
